Sweet Potato Apple Casserole

We were invited to spend this Thanksgiving with friends and everyone was asked to bring a side dish. I had lots of apples left from when we went picking last month so I decided to make my Sweet Potato Apple Casserole. It’s a real easy recipe and always a crowd pleaser. I bet your Christmas guests will love it.

Serves 12

4 sweet potatoes peeled and cut into ¼ inch thick rounds
4 tart apples peeled cored and cut into ¼ inch thick slices
¾ cup honey or agave
1 tsp vanilla extract
1 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
¼ cup butter
¼ tsp salt

Preheat the oven to 375°.

In a greased 13X9 baking dish alternately layer sweet potatoes and apple slices. Put everything else in a saucepan and bring to a boil. Pour the hot syrup over the potatoes and apples. Cover the dish with foil and bake for an hour. Reduce the temperature to 350°, uncover the dish and bake another 10 minutes until the potatoes and apples are cooked and the syrup thickens.
