Virginia is for Lovers Banana Bread for Two
½ cup plus 1 tbs flour
½ tsp baking powder
½ tsp baking soda
1/8 tsp salt
1 ripe banana mashed
¼ cup plus 2 tbs brown sugar
3 tbs vegetable oil
¾ tsp vanilla extract
Yolk of 1 egg
1 petite loaf pan (about 5 x 3 inches)
Preheat the oven to 350°.
Lightly grease the loaf pan and dust with flour. Mix dry ingredients and set aside. Place the mashed banana, brown sugar, oil, vanilla and egg yolk in a small bowl and blend. Add dry ingredients and stir just until blended. Pour the batter into the loaf pan. Bake 25-35 minutes (until the bread bounces back from light pressure or an inserted toothpick come out clean) . Remove the pan from the oven and let cool on a wire rack for 10 minutes. Invert the pan over rack, releasing the bread. Cool a bit before slicing.
